Cheese of the Month - Ricotta

The distinctiveness of Gad’s 5% Ricotta Cheese begins with its raw materials. As opposed to other cheeses made from the milk protein called casein, our Ricotta is made primarily from the cheese water proteins (called albumens and globulins), the richest of the minerals. These proteins are comprised of balancing amino acids with a high biological value that enables the supply of amino acids, even when one’s daily cheese consumption is relatively low. The high biological value is especially advantageous for athletic people, as it helps build muscle mass after intensive training, and for growing children.

Calcium – One of the most dominant minerals in Ricotta cheese is calcium, which everyone knows is so important because it helps strengthen the bones and teeth. Of all the soft cheeses being sold in Israel, Gad’s Ricotta has the most calcium. There are 500 (600 in goat Ricotta) milligrams of calcium in 100 grams of cheese. Such high calcium content supplies 2/3 of the recommended daily allowance of calcium for children and half the recommended daily allowance for adults.

Many dieticians run into the need to satisfy their patients’ daily intake of calcium with a relatively small amount of dairy products (for different reasons). Gad’s Ricotta can easily contribute greatly to one’s daily balance of calcium.

Fat – Gad’s various Ricotta cheese are low in fat but without compromising the great taste. The Ricotta cheeses contain only 5% fat and a small amount of saturated fat and cholesterol. These values are of course important to anyone who is health and weight conscious. These values are also important for preventing heart disease, high blood pressure and diabetes.

Calories – As a result of the relatively low percentage of fat, the amount of calories in the Ricotta cheese is just 89-97 calories per 100 grams (depending on the different types), which allows them to be easily included in one’s diet.

The texture of the Ricotta gives a slightly granulated feeling, which distinguishes it from the other cheese spreads, and the Ricotta also has a low acidity when compared with other cheeses.

These organoleptic characteristics of the Ricotta cheese make it a great in sandwiches and various cooked foods, whether salty or sweet, and they bring its healthy advantages to pasta dishes, quiches, bakes goods, sandwiches and more. The healthy advantages do not get lost in the cooking or baking, which is why Gad’s Ricotta cheese go well with any menu.

Goat Ricotta – The uniqueness of Gad’s Goat Ricotta is of course its milk base. Goat milk is considered the easiest to digest according to alternative medicine. Many people who have sensitive digestive systems can enjoy eating dairy products made with goat milk without any of the pain. Studies show that the fat globules in goat milk are smaller, softer and comprised of small crumb-like pieces in comparison with cow milk. The protein in goat milk is richer in amino acids essential for the body, which is important for everyone’s well being, but is especially important for people who regularly exercise and for helping children grow muscle mass. There are 600 milligrams of calcium in 100 grams of Gad Ricotta cheese. The calcium from the goat cheese is more easily absorbed since the ratio between calcium and phosphorus helps the calcium’s absorption in the body.

The final result is milk that is absorbed relatively faster (goat milk is absorbed within 20-30 minutes when compared with cow milk, which takes up to 3 hours) into the body’s digestive system and its ingredients are more accessible.

The Chinese believe that in terms of the production of phlegm, goat milk contributes less to the production of phlegm than cow milk.

Gad’s Goat Ricotta is especially low in sodium. It contains only 120 milligrams of sodium per 100 grams of cheese. This is less than most other soft cheeses sold on the shelves. It is clear from studies that sodium is one of the risk factors that contribute to an increase in blood pressure at any age. Studies also show that children who consumed a lot of sodium throughout childhood have a larger risk of developing high blood pressure later in life. A controlled, low consumption of sodium at a young age thus defends the body against the risks of developing high blood pressure later on. The low sodium content does not affect the great and subtle taste of Gad’s Goat Ricotta.

Salty Ricotta – Beyond its amazing flavor, Gad’s salty Ricotta has low sodium relative to other salty cheeses. Sodium is an obvious risk factor for the development of high blood pressure. Today it is highly recommended to lower one’s daily sodium intake, especially at a young age. The studies agree that lowering sodium intake contributes to lower blood pressure among people who suffer from high blood pressure and the lowering of the risk of its development among those who do not suffer from high blood pressure. The main difficulty in lowering sodium intake is of course the difference in taste. Gad’s salty Ricotta makes it easier on those used to eating salty cheeses to continue to eat healthier but without compromising on the taste.

Ricotta with Peppers - The Ricotta with Peppers combines red peppers and hot peppers. The red pepper helps to improve the absorption of calcium in the body. According to Chinese Medicine it also contributes to strengthening and improving vitality. It is rich in beta carotene, which is a strong antioxidant that protects the body’s systems from outside damage. In addition, it helps improve eyesight, the functioning of the immune system and helps to keep skin healthy. The red pepper contains additional substances that help prevent cancer. The hot pepper also contains amino acids and other substances that keep the digestive system functioning properly and help prevent the development of cancer, heart diseases and damage to eyesight. It also contributes to keeping the body warm, speeding up the exchange of substances in the body and burning calories.

Natural Ricotta with Synergy 1 – Gad’s natural Ricotta has a special ingredient called synergy 1. This helps improve the absorption of calcium in the digestive system. It is clear today that only 30% (or 50%, among adults) of the calcium consumed is actually absorbed in the intestine. Many companies enrich their cheese with calcium but the question is what amount of calcium is actually absorbed. Synergy 1 contains inulin and oligofructose, which are nutritional fibers with a unique structure shaped like various long chains. These fibers constitute an excellent nutritional platform for the probiotic intestinal bacteria and enable them to operate and multiply. The presumed effect of these fibers is that when the inulin and oligofructose reach the upper part of the large intestine, a speedy fermentation process begins.
